Fix bug in freshVarForClosureIter. Fixes #18474 (#19675) [backport]

* Fix bug in freshVarForClosureIter. Fixes #18474.

freshVarForClosureIter was returning non-fresh symbols sometimes.
Fixed by making addField return the generated PSym.

* remove discardable
